Consider yourself lucky, very lucky, when all you do is point your camera at your friends and they put up with you.
But then friends happily pose and love to play model too, right?
Tray, Pete, D and I went down to Jagos for brunch a fortnight back. The weather was good. Well HOT. Much different from the 15 degree cold night we’re in at the moment. I took some shots up close and personal, as you do! Isn’t the Nikon D7000 a charm! I’m still learning to use the various features of this new work horse. At every bend there is more to learn. Most of these are pretty much right out the camera with minor image-sharpening and exposure compensation. The colours are right out the camera as is the noise free imagery! Gee its great to be a Nikoian!

Biriyani cooking class at Nilgiris

A couple of months back we had signed up for the biriyani cooking course at Nilgiris. We have been there on many occasions and the food has always been great. Except this time we were going there to do a course — the art of andhra chicken pulao & biryanis. Am happy to say it was a fun filled, informative and hands-on four hours and we all got to eat some really yummy dishes. We cooked our hearts out. Ajoy is such a great cook and takes a lot of pride in what he does. I also won one of his Regional Indian Cooking book as a prize!! Yippie!! Duly autographed
Ajoy really explains you very basic stuff in such good harmony with nature and the culture of the land. The fact that there are no food photos goes clearly to say that we were very busy tucking into the yumminess we had just learnt. Who’d bother to take photos when there is such flavoursome food waiting to be devoured!! If you have a flair for Indian food I’d highly recommend you to do the course.

Harissa Chicken with Coriander
I must be in the middle eastern flavours lately. I talked about Za’atar a few days back and now here comes Harissa Chicken with Coriander. This is an easy dish and can be prepared in less than twenty minutes should you have the chicken marinaded all ready to go. Marinate the chicken at least an hour for flavours to flow through but nicer if you can afford about 2-3 hours.

Chicken with olive oil, freshly chopped coriander, Harissa & sea-salt. Marinate.

Having a good bakery close to home is God sent! We are really lucky to have Victoire in the neighbourhood. For those not in the know Victoire supplies bread to establishments like the Rookpool and the likes.
Fratelli Fresh
Life is too short to waste on average food. You agree right? Well in that case you should really try Café Sopra at Fratelli Fresh, Walsh Bay. We have already been there a couple of times in the last three to four weeks and the food really doesn’t disappoint. And when its all freshly cooked with beautiful Italian wines its hard not to like it! They also have outlets in Waterloo, and Potts Point which we haven’t tried but if the one in Walsh Bay is anything to go by am sure the others are going to be equally good. Dare I say Fratelli Fresh made the mark in Sydney Morning Herald Good Food Guide, and has recently been awarded “Best Cafe” by Time Out magazine. Needless to say I have not had tomatoes this juicy and sweet and peaches that make me crave a whole lot more.
Offspring
What a great roller-coaster Channel 10′s ‘Offspring‘ has been. I love it. And now having seen the season final last night I miss it already. Who doesn’t like a good family drama. And don’t we all go through our own, growing up, and even when grown up
. We all have a little drama queen in us waiting to leap out in all glory at the weakest of times. Offspring catches these juxtaposed raw tender moments of truth impeccably well with striking highs and lows in a somewhat hilarious and awkward moments of family faux pas concocting a labyrinth of twists and turns. Who said life was meant to be simple.
What made it special even more is the fact that we’ve been to a few of the cafés and walked those very spots when in Melbourne with Robyn and D a few times. Who ever knew they’d be make a movie trailing our path…. but jokes aside I have come to love the Offsprings technique of story-telling… the psycho-analysis of Nina’s fantasy world, Billie’s high combustion character looking for minimal oxygen to explode yet with a huge heart for her sister and family — probably my favourite character… oh I could go on but much rather you see the real thing. I’ve really enjoyed the show… very satisfying to watch something that’s directed so beautifully and choreographed with passion. Or maybe just the thought of enjoying another family go through emotional hell from the comfort of our cosy lounge. Now thats pure evil but you know it makes smokin’ telly!
Leura Gardens Festival

This weekend we’re heading off to the lovely Blue Mountains, well more precisely to the Leura Gardens Festival. This year its being held from the 2nd of October to the 10th. For the benefit of others who may not know where Leura is — the gardens of Leura is situated in the Blue Mountains approximately 100 kms west of Sydney and are famous for their magnificent displays of Azaleas, Rhododendrons, Dogwoods and Camellias, as well as flowering annuals, perennials and bulbs. The blaze of springtime colour in the gardens attracts visitors from all parts of Australia and overseas. There are big gardens and small gardens in the Festival and each garden has its own distinctive character. Link on the the following links to have a read on thes individual gardens. The list includes Shenstone, The Braes, Rustlins, Brabourne, Tandella, Greenheys, Elouera, Abbotsford, Everglades and Illion. We’ll be run off our feet literally, trying to do all that in a day, but it’d such be a welcome change.
A bit of history — The Leura Gardens Festival is a registered charity, the objective is to provide funds for medical equipment and patient care at the Blue Mountains District Memorial Hospital. There is more history to be found here. The proceeds go for a very worthy cause while promoting tourism and economy for this beautiful ecofriendly area. Heres hoping I’ll have one or 2 decent photos to share with you that do the lovely mountains justice.

Very excited… in fact very very excited that we’re going to see Pink Martini live again at the beautiful State Theatre Only this time the lovely D got us front row seats!! Yippie!
Pink Martini is one of our all time favourites. China Forbes is an amazing singer and her band is equally amazing! They draw inspiration from the romantic Hollywood musicals of the 1940s and 50s with a global perspective. Close your eyes and listen to Pink Martini and I promise China Forbes would truly take you away to a dreamland where everything is happy and just… their songs are very comforting and soulful. Their band being so diverse and multicultural it makes them very unique! I won’t be at peace till we are seated and watch them blow our minds away one more time. Bring on Friday arvo! ![]()
Moroccan Chicken with cous-cous stuffing

If you frequent Lightly Toasted you’d remember the time I wrote about the Classic and contemporary Women’s Weekly* Roast Book? And where you could get them cheaper? Well, I’ve to confess I love a good roast. They make me feel like I can eat all day without the thought of putting on weight not that that much deters me really! But roasting is mostly fun and very satisfying especially in winter. All those hot warm, succulent juicy roasts come to mind when its cold outside. I never much resist food really I quite literally keep eating when everyone around me has stopped. Here is a little Moroccan Chicken with cous-cous stuffing I made about a month back. Isn’t it appetising? The roasted vine ripened tomatoes are my weakness and sadly these were just a tad overdone, still yummy though.
* I have known plenty people that will turn up their nose when they hear the name — Women’s Weekly. But you know what, its quite alright for home cooking and the occasional entertaining. Not everyone packs The Cooks Companion by Stephanie Alexander or the likes in their kitchen. Its great to have gorgeous recipes but at the end of the day a lot depends on the technique, ingredients and passion.
Now speaking of ‘arsenal’ a great quote comes to mind. This is somewhat related. And bet you’ll see my correlation in a second.

My Dalley’s walk

I’d mentioned about my Dalley’s walk last year and while most of the year round its pretty, it certainly outdoes itself in Autumn. We have been away for a while in Autumn this year and have come back to the tail of the magnificient season. Somehow having an overly hot summer this year and for a much longer time that usual and then suddenly dipping into cold weather has the autumn trees confussed. While the fall colour is out its not neat as strong as it normally would be. But what makes its really bright and saturated is a little gentle drizzle. The autumn leaves look more shiny and brighter and with an overcast sky the reds look redder. Luckily we’ve been having a moderate drizzle for the last 3 days and every place is blooming in autumn hue.
There was a speeding car whizzing past just as I shot the frame. Must have been running late just like me ![]()
Coffee Friands

I come bearing gifts so please don’t knock me back. Made some Coffee Friands tonight. They turned out quite nice. The recipe is dead simple if you want it, scroll away. There are a few varieties on the Coffee Friand recipe on the net but this is slightly customised to my liking. Coffee and orange though two flavour opposites they blend well as orange brings a zing to the alerting coffee palette.
Miss Mouschka
This is Mouschka our neighbour Pat’s cat. We looked after her when Pat was away for a few days over Easter break and it was nice to see Mousckha was very fond of us. She rolls on the floor right next to our feet stretches a kilometre wide and yawns and rolls back on the other side then nudges back up and follow us around and jump up on the couch and sits next to us for a cuddle and a brush…just how cats should be!
Semolina and yoghurt lemon-syrup cake
I made the Semolina and yoghurt lemon-syrup cake yesterday afternoon. It was much easier than making the Marmalade Polenta Cake — but transferring it from the cooling wire rack to the cake stand was a mighty chore… thought I had nearly crumbled it to pieces… Luckily it got there in the end in one piece though. And it tasted… well… yum, even if I say so ![]()
